Everything I see says 2 teaspoons to a pound, so think for 500 grams, or about one teaspoon, I do. Here is a forum on a board of cake decorating, maybe you could join and there.

Here's a recipe to make fondant, is the CMC include:

Homemade Roll Fondant
10X sugar 2 pounds of pastry
1 / 2 tablespoon CMC Tylose or tragacanth (see note)
1 / 2 cup sugar (see note)
1 tablespoon vegetable shortening
6 tablespoons hot water (more water you can, depending on the structure that you want to add.)
...
2 1 / 2 pounds of fondant.
